Entry #355 – May 7, 2010: A recipe for baked eggs

Richard, who owns the Inn on Somerset in Ottawa, made baked eggs for breakfast today.  I highly recommend staying there on your next trip to Ottawa, just for his baked eggs alone. Delicious!

My dissected version of the recipe:

Take one strip of cooked bacon and line the sides of a small muffin tin.  Crack open one egg in the middle of the bacon, inside the muffin tin. Drop a teaspoon of sweet tomato chutney on top of egg.  Bake until egg is cooked thoroughly.  Top with a few strands of a mild cheese.  Serve hot.
